Temperature regulator allows for the brewer to set a specific fermentation temperature, and regulator maintains that temperature within a degree or two. (to prevent burning out refrigerator compressor)

This was needed in order to brew a low carbohydrate India pale ale. The temperature control, along with a high yeast population and the use of alpha-galactosidase(an enzyme that converts complex carbohydrates into simple carbohydrates that are fermentable), keep the yeast healthy allowing for a greater and longer lasting fermentation, resulting in less residual sugars and carbohydrates overall.
